Maple Walnut Fudge

Another recipe share today! And while it is gluten free it is most definitely not a healthy recipe. This is a classic here, one that I made every Christmas for as many years as I can remember until the last few when I stopped with the refined sugar. This year it was a special request, so it’s back!

I do not remember where the original recipe came from but I know that I tweaked it over the years. Then of course I forgot my tweaks so I was winging it a bit this year. When my dad gets here I will get his opinion on if it’s as good as before 🙂

Ingredients
  • 2 tablespoons butter
  • 2/3 cup evaporated milk
  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon salt
  • 2 cups miniature marshmallows
  • 1 (12 ounce) package white chocolate chips
  • 1/2 cup chopped walnuts (optional)
  • 2 teaspoons maple extract
Instructions
  1. Line 8 x 8 inch baking pan with foil.
  2. Combine butter, evaporated milk, sugar and salt in medium, heavy-duty saucepan. Bring to a full rolling boil, stirring constantly, over medium heat. Boil, stirring constantly, for 4 1/2 to 5 minutes. Remove from heat.
  3. Stir in maple flavoring, marshmallows, morsels, and nuts (in that order). Stir vigorously for 1 minute or until marshmallows are melted (It will set up quickly). Pour into prepared baking pan.
  4. Allow to cool and cut. I store it in the fridge because it tends to get a little sticky at room temperature.
